Pink Coconut Cake Pops


I've been really uninspired and bored with all the recipes I've been browsing through lately and I really wanted to bake something new and different. After finding a cute little dessert website I came across a recipe for Cake Pop's and I instantly loved the idea, especially that they were on lollipop sticks. I modified the recipe by using lemon cake and finished them off by rolling them in sweetened coconut flakes. I loved the way they looked at the end, so original and fun! The mix of lemon cake, pink chocolate and coconut flakes was perfect.  

{Crumbled lemon cake crumbs mixed with cream cheese frosting}
{Rolled cake balls ready to hit the fridge for a few hours}
{This dessert is so pretty and visually appealing!}

Yummy AND pretty! I love any lemon dessert, and cream cheese frosting is my favorite, so these are a must-try for me.
