Salmon With Honey-Coriander Glaze

 {coriander seeds baked until golden and then crushed to add the perfect flavor}

Since the summer season is just around the corner, I have been aiming to eat a lot more fruits and vegetables and to get enough protein into my diet to stay in shape.  Salmon is one of my favorite seafood so when I came across this recipe for Salmon with a honey-coriander glaze, I couldn't resist.  I have never cooked with coriander seeds before so I was delighted when they exuded a wonderful aroma when heated and crushed.  The honey-coriander glaze added an aromatic flavor to the salmon and it turned out delicious.  I served it with a spring mix salad and rice with vermicelli on the side.
