Curried Red Lentils & Spinach Soup


Some days I wake up with the desire to have everything light. Light breakfast, light lunch, light dinner & even light snacks. Usually this desire comes into effect when I am recovering from a weekend plenty of cakes and sugar candies.  I found this recipe for curried lentils & spinach soup last summer in a health magazine and I have made it endless times ever since.  Whether served hot or cold it's a delicious mix of flavors, textures and goodness. 

{washed red lentils}
{curry powder for the perfect flavor}
{served with lemon wedges to add a citrus finish}
